Anzac Biscuits with Coconut Recipe
AKA Land Down Under Cookies
Yield: 36 biscuits (cookies)
Reading recipes from other countries quickly reveals differences in language and measurements. I remember when I lived in Spain I was constantly converting degrees from farenheit to centigrade, and then penciling in the conversion in my American cookbooks. Nowadays, I cheat by keeping my I-pad handy to “google” conversions. I purposely left the recipe as originally written so you can see some of those differences. I did note conversions and substitute ingredients parenthetically. Parents could turn this into a little math lesson though, by making their kids figure out the conversions on their own. And just for fun, be sure to call these “cookies” by their rightful name: BISCUITS!
Ingredients:
- 125g (1/2 cup) unsalted butter
- 1 tablespoon golden syrup (I used honey)
- 1 cup plain flour
- 1 cup coconut
- 1 cup sugar
- 1 cup rolled oats
- 2 teaspoons bicarbonate of soda (I used baking soda which is actually slightly different than bicarbonate of soda)
- 2 tablespoons boiling water
Method:
Preheat oven to 180°C (350). Line 3 trays with baking paper. Place flour, coconut, sugar and rolled oats in a large bowl. Melt butter and golden syrup in a small saucepan (don’t burn!), then add bicarb and water. Fizz! Stir butter-foam into dry ingredients and mix well. Roll a heaped teaspoonful into small balls and place on trays. Leave about 3cm between them. Bake for 10-15 minutes. Cool slightly before lifting off with a spatula to cool on wire racks.
Notes:
- In my oven (new fan force switch, hooray!) half the biscuits were, ahem, overdone at 10 minutes. Check frequently!
- They should spread and flatten nicely. If they are a bit puffy, remove them from oven, squash with spatula and return to oven to finish cooking (a nifty trick from my auntie).

I would choose a Tasmanian devil because I don’t know much about them. I have gone to Brookfield Zoo many times and have seen them in the Australian House. I guess I am assuming they live in Australia because they are in Australia House, but I could be wrong!?

Also maybe a platypus! Yes, I’d probably write report in platypus. They seem much more gentle than a Tasmanian devil and cuter. Plus, I like the platypus puppet on Mr. Rogers Neighborhood.

I don’t think I ever realized that puppet was a platypus. God is certainly creative. I was amazed by all the different pictures of Australian animals I looked at while researching for this post. The echidna really stuck out to me (insert laugh if you know what an echidna looks like).
