Welcome to our fourth and final week exploring Peru at Mommy Maleta. We are going to get a taste of Peru today by making a popular Peruvian dish called lomo saltado. This easy to make recipe is similar to a beef stir-fry.
If you recall, we talked about lomo saltado in week two of this series when we met Elijah and Alessandra. In that interview, they said lomo saltado is their favorite Peruvian meal.
My family really enjoyed this meal. I read several different versions of this recipe. It can easily be modified by adding more veggies, or making your own french fries. I decided to use packaged fries for this recipe to keep it very simple.
When using packaged products I try to find items that use minimal ingredients. So for this recipe I tried the new country style line of Ore-Rida fries (not sponsored in case you were wondering) called called Simply which lists potatoes, olive oil, and salt as the main ingredients. They turned out great.
The nice part about using packaged fries is that while they are baking in the oven, the rest of the meal can be assembled. It’s also helpful to chop your veggies prior to starting so you can easily toss them into the pan after frying the meat.
Ingredients
- 12-16 oz of your choice of beef for stir-fry (I used beef that was already cut for stir-fry)
- 1 24 oz package of french fries
- salt and pepper
- 1/8 cup olive oil
- 1/4 medium red onion, thinly sliced
- 1/4 medium tomato
- 1/4 medium red pepper (optional)
- 3 tsp vinegar
- 1 tsp soy sauce
- 2 pinches of dried parsley
- white rice
Instructions
- Bake fries according to package instructions
- Make 1 cup of white rice according to package instructions
- While rice is steaming and fries are baking assemble the stir-fry
- Heat pan to medium and add olive oil
- When oil is hot stir-fry meat until cooked until browned
- Add the onion and pepper and cook until they soften
- Add the tomato, vinegar, and soy sauce
- Simmer until the veggies are cooked
- Add parsley
- Add salt and pepper to taste
